Steak Queso Dip

Steak Queso Dip is creamy, spicy, smooth, cheesy and fully loaded with tender bites of steak. This queso is better than anything they're serving at your favorite Mexican restaurant. We devoured this cheesy dip with tortilla chips the first time we made it and I couldn't resist making it again a few nights later and pouring it over nachos.

There is just enough heat in this Steak Queso Dip to keep you coming back for one more bite. If you like it extra hot, I recommend doubling up on the jalapeños.


This is a very hearty queso that can easily be a meal along with some chips on the side. Next time you're grilling, set aside an extra steak so that you can make this Steak Queso Dip. You will not regret it.



COOK'S NOTE: The recipe is made with simple white American cheese (not to be confused with another cheese product that is shelf stable). You should be able to find plain white American cheese in the deli at any grocery store.

I recommend grilling the steak to medium rare or medium. The more tender the steak, the better it will work in the queso.


Steak Queso Dip

recipe adapted from this one
Yield: 2 cups

1/2 pound sliced white American cheese, roughly torn or chopped into 1" pieces
2 tablespoons chopped green chiles, frozen or canned will work fine
1 tablespoon pickled jalapeño slices, diced fine
1 tablespoon juice from the pickled jalapeños
1/3 cup milk
1/4 cup water
1/8 teaspoon cumin
8-12 ounces grilled steak, warm or room temperature

Combine the cheese, green chiles, jalapeños, jalapeño juice, milk, water, and cumin in a medium size glass bowl. Microwave for five minutes, pausing to stir after every minute. The dip will be very watery at first, but it will thicken as it finishes cooking.

While the dip is cooking, slice the steak as thinly as possible and then cut into bite-size pieces. Add the steak to the queso when it finishes cooking. Stir to combine and let rest 3-5 minutes before serving. Serve hot with chips for dipping. Enjoy!

Crunchy pretzels and a creamy filling are topped with piles of strawberries and blueberries making this Berry Pretzel Dessert our favorite dessert for summer!

Several years ago, my aunt introduced me to the ever-popular Strawberry Pretzel Salad. (If you aren’t familiar with it, just google it and you’ll see it is well-known and well-loved.) I’d never even heard of it before and I fell in love with it from the very first bite. I think I may have eaten 3 servings that day, including choosing it over pie for dessert!

Strawberry Pretzel “Salad” isn’t a salad at all. It’s a layered dessert that starts with a pretzel crust, then a sweet cream cheese and cool whip layer, and it’s topped with a strawberry jello layer. It is absolutely delicious and no one can ever resist a slice of it.

This Berry Pretzel Dessert is my twist on that recipe. Made without cool whip or jello, this dessert is a much less sweet, but still completely irresistible cousin to the original. It starts with a pretzel crust that is layered with a lightly sweetened creamy filling. Topped with an abundance of fresh berries, I found myself going back for sliver after sliver all night long.

COOK'S NOTE: I loved the crumbling crust with bits of crunchy pretzels throughout, but if you prefer a more traditional crumb crust (that will also be more easily sliced) be sure to grind every bit of the pretzels into fine crumbs.

{No-Bake} Berry Pretzel Dessert
Yield: 9-12 servings

Crust Ingredients:
3 cups miniature pretzel twists
1/3 cup melted butter
1/4 cup light brown sugar

Filling Ingredients:
16 ounces cream cheese
1/2 cup sugar
3/4 heavy cream
1 teaspoon vanilla extract
1/4 teaspoon kosher salt

Topping Ingredients:
2 1/2 cups chopped fresh strawberries
1 1/2 cups fresh blueberries

Finely crush the pretzels in a food processor, blender, or with a rolling pin in a heavy zip-close bag. Place the crumbs in a medium-size mixing bowl. Add the melted butter and brown sugar and stir to combine. Press the crust mixture into the bottom of an 8x8 pan.

In a large mixing bowl, combine the cream cheese and sugar. Beat until combined, about 2 minutes. Add the heavy cream, vanilla extract, and salt. Beat until smooth and fluffy, about 4 minutes. Pour over the crust and smooth with a spatula.

Top generously with berries. Refrigerate at least 2 hours before serving. Enjoy!

Balsamic and Basil Berry Salad

I simply can't get enough of all the fresh berries this summer! I've made this Balsamic and Basil Berry Salad at least twice a week for the past month. Fresh strawberries and blueberries are tossed in a very light balsamic vinaigrette and then sprinkled with fresh basil to make this light and summery fruit salad.

I like to make this salad right before serving it. However, any leftovers will keep in the refrigerator for a day or two. This salad is at its prettiest immediately after tossing it with the vinegar and oil. The berries will begin to soften after a few hours in the refrigerator. Still tasty, but not as nice for serving.

If I'm lucky enough to have any of this salad leftover, I like to toss it over plain yogurt with a little sprinkling of granola and call it breakfast or lunch. It's my favorite late night snack too. Honestly, I can't think of a meal that wouldn't be made more tasty with this salad on the table.

Balsamic Berry Salad is going to be making frequent appearances in my kitchen for as long as the berries are available.

COOK'S NOTE: The sugar in the recipe below is optional. Only add it if the berries aren't quite as sweet as you would like.

Balsamic and Basil Berry Salad
Yield: 6-8 servings

2 pounds fresh strawberries, quartered or cut bite-size
12 ounces fresh blueberries
2 tablespoons traditional or white balsamic vinegar
1 tablespoon olive oil
1/8 teaspoon kosher salt
(optional) 1 tablespoon white sugar
8 basil leaves, sliced very thin

Combine the strawberries and blueberries in a medium size bowl. Drizzle with balsamic and oil. Sprinkle with salt, and with sugar if desired. Stir gently to coat. Sprinkle with basil and toss once more. Serve immediately, or refrigerate for up to an hour. Enjoy!

BBQ Sundaes

Pulled pork, baked beans, and southern-style coleslaw are layered together to make these irresistible Barbecue Sundaes. While my husband was traveling a few years ago, he tried a barbecue sundae in a restaurant. He described the meal to me, and I couldn't even imagine it. I had to recreate it as soon as possible for myself.

Let me tell you that this meal is spectacular. I sighed after the first bite and I didn't stop taking bites (while standing at the kitchen counter!) until that jar was empty. I'm not even kidding you. I liked this meal so much, I made it again the very next night.

In the past two years, this has become a summer staple on our meal plan. My whole family (and every friend we've introduced to this combination) adores this meal. I typically pile the sundaes on paper plates for a super easy dinner night, but it thrills my kids any time I serve the sundaes in mason jars. Pretty foods always taste better, right?


COOK'S NOTES: I make these sundaes using the recipes I've linked to in the recipe below. You can use your favorite pulled pork, baked beans, coleslaw, and barbecue sauce recipes or use store-bought versions if you're looking for a shortcut meal. The sundaes can be layered in mason jars, or sundae cups, scooped into bowls, or piled on paper plates. However you make these barbecue sundaes, they are delicious.

BBQ Sundaes
Yield: 6 servings

1 lb hot Sweet and Tangy Pulled Pork
3 cups hot Baked Beans
1 recipe cold Memphis Coleslaw, about 4 cups worth
1 cup warm or room temperature Sweet and Spicy Barbecue Sauce

In the dish of your choice, layer the beans, then the pork, drizzle with barbecue sauce, and then top with coleslaw. Serve with a fork and enjoy!
